This is one of my families favourite finger-lickin' recipes. It's simple and quick to prepare. Once prepared you just bung it in the oven for an hour and stir occasionally (so also great if you have guests round as you don't need to hover over a stove).
Serve with fried rice as a main, or just take a bowl of them to the sofa and munch on through while watching the TV.
Any part of the chicken can be used in this recipe, as the marinade really acts as a glaze, and a sauce once cooked. I usually go for chicken wings as they're fun to eat and they are also SO cheap (easily found in supermarkets, or ask your butchers).
If you find wings a bit unsubstantial and tricky to eat, and would prefer a bit more meat, then I would suggest legs or thighs, you CAN use chicken breast, but it cooks very quickly and will overcook and dry out before the sauce has turned nice and sticky.
Serves 5
(or 4 if just eating by themselves on the sofa - the recipe will look a lot, but don't forget there isn't actually that much meat per wing!)
Shopping List:
6 tbsp Ketchup
6 tbsp Soy sauce
6 tbsp Sweet chilli dipping sauce
4 tbsp Brown sugar
8 large Garlic cloves
1.5 kg Chicken wings
Method:
1) Take your chicken wings and give them a rinse under a cold tap. Next get your chopping board and knife and cut through the middle of the wing, separating it into the shoulder and the wing tip. (you can leave the wing whole if you're lazy though, but i find them easier to eat when they are cut in half!)
2) Next you want to make the marinade. Take a garlic crusher and crush your garlic into a large mixing bowl. Then add all the other ingredients. Taste before you add the chicken. If you want it sweeter, add more sugar. But the sugar will caramelise in the oven so don't add TOO much more, 4 tbsp is enough for me.
Then tip the chicken wings into the mixing bowl, and mix thoroughly. This can be done with a spoon, but i like to get my hands in there and make sure all the chicken is covered.
Now it is totally up to you how long you want to marinate the wings for - 10 minutes to 2 hours, whatever you fancy! I often just leave them for 10 minutes while the oven heats up.
3) Turn the oven to 190 degrees C, and let the chicken marinade while the oven heats up.
4) Take a deep baking tray (6cm deep x 30cm length roughly), and tip all of the marinade into the tray. Make sure to get in all of that sauce!
5) Cook for an hour and 10 minutes in total, stirring the chicken every half an hour or so. You want a caramelised glaze over the chicken at the end of it with a bit of the sauce left in the tray to dip the chicken into, or just to spoon over some fried rice if eaten as a main.
(Don't worry if parts of the chicken are blackened, it adds to the BBQ effect!)
That is it. Yes, as easy as that! Now, munch away.
Happy cooking! Jodie x
